Bison Breakfast Spread (Grattons de Bison) |

A welcome change from topping your toast, English muffin, or bagels with jam - try this high protein, lightly spiced treat instead.
Delicious spread on anything toasted, even better topped with diced tomato and freshly chopped parsley.
The Bison Breakfast Spread is very spreadable at room temperature, or from the refrigerator it can be ready after 10-15 seconds in the microwave.
This spread can be made in batches and freezes well.
For freezer batches, to help maintain flavour, it is best to increase the spices marked with an asterisk (*) by 50%.

shallots, finely chopped
clove of garlic, minced
finely ground bison
salt
ground pepper
ground thyme *
ground sage *
ground savory *
dry mustard
water
unsalted butter
diced tomatoes for garnish
freshly chopped parsley for garnish

Directions |

- Sauté shallots in olive oil over medium heat until nearly transparent but not brown.
- Add garlic, cook and stir for another minute, then add finely ground bison.
- Continue to cook stirring the whole time until the meat has lost all its red colour..
- Lower the heat as necessary to avoid browning pan contents.
- Add salt, pepper, thyme, sage, savory, dry mustard and water.
- Continue to cook and stir until the moisture in the pan has practically gone.
- Remove pan from heat. Transfer meat to a mixing bowl.
- Allow meat to cool to room temperature.
- Blend in enough butter to turn meat mixture into a spread.
- Refrigerate in small sealable containers and use within 4 days.
