canola oil
green beans, trimmed and cut on the diagonal in 2 inch sections
fresh chili pepper
minced garlic
minced/grated ginger
green onions, chopped fine
sugar
soy sauce
rice wine or dry sherry
Directions
Put canola oil in a wok and place over medium high heat. Once hot add a portion of the prepared green beans (about 6 ounces).
Fry for 2 to 2 1/2 minutes or until beans just begin to blister or wrinkle. Remove from wok with a slotted spoon. Drain on a cookie sheet lined with kitchen/paper towel. Repeat until all the green beans are fried (about 4 batches).
Remove most of the oil from wok leaving 1 ½ tbsp. Reduce heat to medium and cook chili pepper for 2 minutes or until completely brown. Remove chili pepper.
Increase heat to medium high. Add garlic, ginger and onions. Stir and cook for about a ½ minute. Stir in sugar, soy sauce, rice wine or dry sherry. Immediately add deep fried green beans and combine well. Heat through and serve.
