         Potatoes, Green Beans and Cauliflower



Makes enough so that this is the only vegetable side dish you will need for a meal. Turmeric, salt, ground cumin, ground coriander seed and cayenne pepper should be combined in one separate holding dish before you start cooking.
       Ingredients

potatoes
canola oil
green beans, trimmed
cauliflower, cut in florets
ginger, chopped or grated
turmeric
salt
ground cumin
ground coriander seed
cayenne pepper
water

fresh chopped cilantro leaves
       Directions
  • Wash and peel potatoes, cut into ½ inch cubes.
  • Pour oil into a large non-stick saucepan or wok and place over medium heat. Once hot (test with a single potato cube), add potatoes and cook for 15 to 20 minutes, or until light to medium brown. Remove potatoes with a slotted spoon and place on a cookie sheet double lined with kitchen/paper towel. Set aside in a warm place.
  • Add green beans to hot oil and cook for 2 to 3 minutes or until bean skins just begin to blister. Remove with a slotted spoon and place on the cookie sheet holding the potatoes. Keep warm.
  • Add cauliflower florets to hot oil. While cauliflower is cooking, whisk the turmeric, salt, cumin, coriander seed, cayenne pepper and water together in a small bowl to form spice blend. Set aside. Turn the cauliflower florets occasionally while cooking. After 5 minutes, or when florets begin to brown at the edges, remove pan/wok from the burner. Remove cauliflower florets from oil with a slotted spoon and place on cookie sheet with the potatoes and green beans. If necessary, pat vegetables with paper towel to remove excess canola oil.
  • Remove all but 2 tbsp of oil from pan/wok. Over medium high heat cook the ginger for about a minute. Add potatoes, green beans and cauliflower. Quickly whisk the spice blend again and pour over top. Continue stirring until heated through, about 2 to 3 minutes. Serve garnished with chopped cilantro.

    NOTE: Cilantro and coriander leaves are one in the same.
