         Peter's Homemade Spaghetti Pasta Sauce




If you have the time, here's the best pasta sauce to accompany our recipe for Spaghetti And Bison Meatballs.

This recipe makes a very large batch and what's left over freezes beautifully. The sauce is excellent reheated. Just add a little extra olive oil and some water if it ever becomes thicker than you prefer.

        Ingredients

olive oil
medium sized cooking onions, finely chopped
diced plum tomatoes (28 oz size)
tomato paste
large green pepper, diced
large sweet red pepper, diced
Tabasco sauce
freshly ground black pepper
tomato juice, or vegetable cocktail
garlic, minced
finely chopped parsley
dry thyme
salt
dry basil
        Directions
  • Put olive oil in a saucepan. Over medium heat sauté onions until soft.
  • Put sautéed onions into a large stock pot. Add all remaining pasta sauce ingredients and stir to combine.
  • Bring sauce to a low boil over medium-high heat.
  • Reduce heat and simmer sauce for 1 hour.
  • Check for salt; add additional to taste if necessary.
  • Simmer for another 1 1/2 hours to 2 hours before serving.
